Instructions
- Preheat the Oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Prepare the Dry Ingredients: In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- Make the Cookie Dough: In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla, mix until combined. Gradually add the dry ingredients, mixing just until combined. Fold in the diced apple and oats.
- Bake the Cookies: Scoop dough onto baking sheets and bake for 10–12 minutes until golden. Cool on a wire rack.
- Prepare the Caramel Drizzle: Melt caramels with heavy cream in the microwave in intervals. Drizzle over cooled cookies.
