Description

This Cajun Chicken Alfredo recipe combines tender chicken seasoned with bold Cajun spices and creamy Alfredo sauce tossed with fettuccine pasta. The result is a rich, flavorful dish perfect for a comforting weeknight dinner that serves 4 to 5 people.

Ingredients

Scale

Pasta

  • 1 lb fettuccine pasta, uncooked

Chicken and Seasoning

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons Cajun seasoning

Sauce

  • ¼ cup butter
  • 2 tablespoons garlic puree
  • 3 cups heavy cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ⅔ cup shredded Parmesan cheese
  • 2 tablespoons chopped chives

Instructions

  1. Cook Pasta: Cook the fettuccine according to the package directions until al dente. Once cooked, drain the pasta and set it aside for later use.
  2. Prepare and Cook Chicken: In a mixing bowl, toss the chicken cubes thoroughly with Cajun seasoning to coat them evenly. Heat a large skillet over medium-high heat and add the seasoned chicken. Cook the chicken for approximately 8 minutes, stirring occasionally, until it is browned on all sides and cooked through.
  3. Make Alfredo Sauce: To the skillet with the cooked chicken, add butter and garlic puree. Stir until the butter has fully melted. Then, pour in the heavy cream along with salt and black pepper. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet and let it simmer for 8 minutes, stirring occasionally to blend the flavors and thicken the sauce.
  4. Combine Pasta and Finish: Remove the lid from the skillet and stir in the cooked fettuccine pasta. Continue cooking for 4 minutes, allowing the pasta to absorb the sauce and become well coated. Next, stir in the shredded Parmesan cheese until it melts smoothly into the sauce. Finally, sprinkle the chopped chives over the dish and serve immediately while warm.

Notes

  • Use fresh garlic puree for a smoother sauce, or substitute with 2 cloves of minced fresh garlic if preferred.
  • If you prefer a lighter sauce, you can substitute half of the heavy cream with whole milk, but the sauce will be less rich.
  • Adjust Cajun seasoning amount to taste depending on how spicy you like the dish.
  • Parmesan cheese quality significantly affects flavor—use freshly grated for best results.
  • This dish pairs well with a simple green salad or steamed vegetables to balance the richness.
