Ingredients
Scale
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 egg, beaten
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1 tablespoon olive oil (for frying)
For the Slaw:
- 4 cups shredded green cabbage
- 1 cup shredded carrots
- 1/2 cup chopped celery
- 1/4 cup grated Parmesan cheese
For the Dressing:
- 1/4 cup Caesar dressing (store-bought or homemade)
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt (for tanginess, optional)
- 1 tablespoon Dijon mustard
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 2 cloves garlic, minced
- 2 tablespoons grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Prepare the Flour Mixture: In a shallow bowl, combine the all-purpose flour, garlic powder, onion powder, paprika, salt, and pepper. Mix thoroughly to ensure even seasoning.
- Coat the Chicken: Dip each chicken breast first into the seasoned flour mixture, coating it evenly. Then, dip it into the beaten egg, and finally coat with the breadcrumbs, pressing gently so the crumbs adhere well.
- Fry the Chicken: Heat olive oil in a skillet over medium heat. Carefully place the breaded chicken breasts in the skillet and fry for 4-5 minutes on each side, or until golden brown and thoroughly cooked. Remove from the skillet and let rest for a few minutes before slicing into strips.
- Prepare the Dressing: In a bowl, whisk together Caesar dressing, mayonnaise, Greek yogurt (if using), Dijon mustard, lemon juice, Worcestershire sauce, minced garlic, and grated Parmesan cheese. Season with salt and pepper to taste.
- Assemble the Slaw: In a large mixing bowl, combine shredded cabbage, shredded carrots, chopped celery, and grated Parmesan cheese. Pour the dressing over the slaw and toss to coat everything evenly.
- Serve: Arrange the dressed slaw on plates and top with the sliced crispy chicken strips for a complete and delicious meal.
Notes
- For extra crunch, use panko breadcrumbs for the chicken coating.
- You can substitute the chicken breasts with thighs if preferred.
- Greek yogurt in the dressing is optional but adds a pleasant tang and reduces heaviness.
- To make it gluten-free, use gluten-free flour and breadcrumbs.
- Leftover chicken can be refrigerated and added to salads or sandwiches.
