Description

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chopped green cabbage

Additional Ingredients:

  • 1 can (14.5 ounces) diced tomatoes with juice
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: 1 zucchini, diced
  • 1 tablespoon lemon juice
  • Chopped parsley for garnish

Instructions

  1. Saute Vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened, about 5–7 minutes. Stir in garlic and cook for an additional minute.
  2. Add Ingredients: Add cabbage, diced tomatoes with juice, vegetable broth, oregano, thyme, paprika, salt, and pepper. Bring to a boil, then simmer uncovered for 25–30 minutes until vegetables are tender.
  3. Final Touches: If using, add zucchini in the last 10 minutes of cooking. Stir in lemon juice before serving. Garnish with parsley.
