Description

This Cabbage Fat-Burning Soup is a hearty and nutritious vegetable soup designed to support weight loss and healthy eating. Loaded with cabbage, carrots, celery, green peppers, and tomatoes, it’s easy to make and perfect for meal prep. Simmering the vegetables in a flavorful broth infused with dry onion soup mix creates a comforting dish that can be enjoyed hot or stored for later.

Ingredients

Scale

Vegetables

  • 5 carrots, chopped
  • 3 onions, chopped
  • 1 large head cabbage, chopped
  • 2 green bell peppers, diced
  • 10 stalks celery, chopped

Canned Goods & Broth

  • 2 (16 oz) cans whole peeled tomatoes, with liquid
  • 1 (15 oz) can cut green beans, drained
  • 2 quarts tomato juice
  • 1 (14 oz) can beef broth

Seasoning

  • 1 (1 oz) envelope dry onion soup mix

Other Liquids

  • Water, enough to cover the vegetables

Instructions

  1. Prepare the Vegetables: Chop the carrots, onions, green bell peppers, and celery into bite-sized pieces. Chop the cabbage into smaller chunks. Place all of these vegetables into a large pot.
  2. Add the Liquids: Add the two cans of whole peeled tomatoes with their liquid, tomato juice, and beef broth to the pot. Then add enough water to cover the vegetables completely.
  3. Season the Soup: Stir in the dry onion soup mix to evenly distribute the seasoning throughout the soup.
  4. Simmer the Soup: Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer uncovered for 30-45 minutes, or until the vegetables are tender and flavors have melded.
  5. Store the Soup: After cooking, let the soup cool. Transfer it to airtight containers and refrigerate. The soup can be stored in the refrigerator for several days and often tastes better the next day as the flavors deepen.

Notes

  • You can substitute beef broth with vegetable broth for a vegetarian version.
  • Adding more spices like black pepper or crushed red pepper can enhance the flavor.
  • This soup is great for meal prep and freezes well for up to 3 months.
  • Adding protein such as beans or lentils can increase satiety if desired.
