Linguine or Spaghetti:

8 oz

  • 8 oz linguine or spaghetti

For the Sauce:

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter (divided)
  • 2 cloves garlic (minced)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or seafood stock
  • 8 oz cooked lobster meat (chopped into bite-sized pieces)
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley and lemon zest for garnish

Instructions

  1. Cook the Pasta: Cook the pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Prepare the Sauce: Heat olive oil and 2 tablespoons of butter in a skillet. Sauté garlic and red pepper flakes until fragrant. Add wine or stock and simmer. Add lobster meat, lemon juice, remaining butter, and drained pasta. Toss, adding reserved pasta water gradually to loosen the sauce.
  3. Finish and Serve: Stir in Parmesan cheese, season with salt and pepper. Garnish with parsley and lemon zest. Serve hot.

  • If fresh lobster isn’t available, you can use frozen cooked lobster tails or claw meat.
