Description

These Buffalo Chicken Meatballs are a spicy twist on a classic appetizer, perfect for game day or any gathering. Made with ground chicken, celery, green onion, and a flavorful blend of seasonings, these baked meatballs are tossed in a tangy buffalo sauce for a delicious kick. Serve with creamy ranch or blue cheese dressing for dipping.

Ingredients

Scale

For the Meatballs:

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped green onion
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For Serving:

  • 2 tablespoons unsalted butter
  • 1/2 cup buffalo wing sauce
  • Ranch or blue cheese dressing, for serving
  • Chopped parsley or green onion for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Prepare the meatballs: In a large bowl, combine ground chicken, breadcrumbs, celery, green onion, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined—do not overmix. Form into 1 1/2-inch meatballs and place them on the prepared baking sheet.
  3. Bake the meatballs: Bake for 16 to 18 minutes, or until cooked through and golden.
  4. Make the buffalo sauce: While the meatballs are baking, melt butter in a small saucepan over medium heat. Stir in buffalo wing sauce and heat through.
  5. Coat the meatballs: Once the meatballs are done, transfer them to a bowl and toss with the warm buffalo sauce until fully coated.
  6. Serve: Serve immediately with ranch or blue cheese dressing and garnish with chopped parsley or green onion if desired.

Notes

  • You can make these ahead and reheat before serving.
  • For a spicier version, add a pinch of cayenne to the meat mixture or use extra hot buffalo sauce.
