Ingredients
Scale
Chicken and Seasoning
- 1.5 lbs boneless skinless chicken breasts
- Salt, to taste
- Black pepper, to taste
- 1/2 tsp garlic powder (divided)
- 1/2 tsp paprika
- 1 tsp Italian seasoning
- 1 Tbsp olive oil
Filling
- 1 cup chopped broccoli florets
- 1 cup shredded cheddar cheese
- 1/4 cup cream cheese
- Additional salt and pepper, to taste
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) to ensure it is hot enough to cook the chicken thoroughly once seared.
- Prepare chicken pockets: Slice the chicken breasts horizontally creating a pocket without cutting all the way through to hold the filling securely.
- Season the chicken: Season each chicken breast with salt, pepper, paprika, and half of the garlic powder, ensuring even coating for enhanced flavor.
- Make the filling: In a bowl, combine chopped broccoli, shredded cheddar cheese, cream cheese, remaining garlic powder, and season with salt and pepper. Mix well until creamy and uniform.
- Stuff the chicken: Fill each chicken pocket evenly with the broccoli and cheese mixture. Secure the openings using toothpicks to keep the filling inside during cooking.
- Sear the chicken: Heat olive oil in a large ovenproof skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown, adding a delicious crust.
- Bake: Transfer the skillet to the preheated oven and bake for 15-17 minutes, or until the chicken’s internal temperature reaches 165°F (74°C).
- Serve: Carefully remove from the oven, discard the toothpicks, and serve hot, enjoying the rich blend of broccoli and cheddar inside tender chicken.
Notes
- Ensure not to cut the chicken all the way through to prevent filling from spilling out.
- For a creamier filling, soften the cream cheese before mixing.
- Use an ovenproof skillet for easy transition from stovetop searing to oven baking.
- Check chicken temperature with a meat thermometer to ensure safe cooking.
- Leftovers can be refrigerated and reheated gently to maintain moisture.
