  • 1 cup shredded cheddar cheese
  • 1/4 cup cream cheese
  • Additional salt and pepper, to taste


Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to ensure it is hot enough to cook the chicken thoroughly once seared.
  2. Prepare chicken pockets: Slice the chicken breasts horizontally creating a pocket without cutting all the way through to hold the filling securely.
  3. Season the chicken: Season each chicken breast with salt, pepper, paprika, and half of the garlic powder, ensuring even coating for enhanced flavor.
  4. Make the filling: In a bowl, combine chopped broccoli, shredded cheddar cheese, cream cheese, remaining garlic powder, and season with salt and pepper. Mix well until creamy and uniform.
  5. Stuff the chicken: Fill each chicken pocket evenly with the broccoli and cheese mixture. Secure the openings using toothpicks to keep the filling inside during cooking.
  6. Sear the chicken: Heat olive oil in a large ovenproof skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown, adding a delicious crust.
