Scale
Main Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 medium potato, peeled and diced
- 4 cups (1 liter) vegetable broth or chicken broth
- 1 large head of broccoli, chopped into florets
- ½ cup (120g) Stilton cheese, crumbled (adjust to taste)
- 1 cup (240ml) whole milk or cream (optional, for creamier texture)
- Salt and pepper, to taste
Garnish
- Fresh parsley or chives (optional)
Instructions
- Prepare the Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic and sauté for 5-7 minutes, or until the onion becomes soft and translucent.
- Add the Potato and Broccoli: Add the diced potato to the pot and cook for another 3-4 minutes, stirring occasionally to combine the flavors.
- Incorporate Broccoli Florets: Add the chopped broccoli florets to the pot and stir well to mix all the vegetables evenly.
- Simmer the Soup: Pour in the vegetable or chicken broth and bring to a boil. Reduce the heat to a simmer and cook for 15-20 minutes until the broccoli and potato are tender.
- Blend the Soup: Use an immersion blender directly in the pot to puree the soup until smooth and creamy. Alternatively, transfer the soup in batches to a blender and puree carefully.
- Add the Stilton Cheese: Return the blended soup to low heat and stir in the crumbled Stilton cheese, stirring continuously until the cheese melts into the soup, creating a creamy texture. Add milk or cream if you prefer a thinner consistency.
- Season and Serve: Taste the soup and season with salt and pepper as needed. Mix well to incorporate the seasoning.
- Garnish and Enjoy: Serve the soup hot, garnished with fresh parsley or chives if desired for added color and flavor.
Notes
- For a richer soup, use cream instead of milk.
- Stilton cheese can be adjusted to taste depending on your preference for sharpness.
- You can substitute vegetable broth with chicken broth if not vegetarian.
- Use an immersion blender for ease and speed; be cautious when blending hot liquids.
- Leftover soup can be refrigerated for up to 3 days or frozen for up to 1 month.
