  • 2 slices cooked bacon (optional)
  • 1 tablespoon mayonnaise (optional)
  • Nonstick cooking spray


Instructions

  1. Prepare the scrambled eggs: In a small bowl, whisk together the eggs, milk, salt, and pepper until fully combined. Spray a small skillet with nonstick cooking spray and heat over medium heat. Pour in the egg mixture and scramble gently until the eggs are just set but still moist. Remove from heat and set aside.
  2. Butter the bread: Spread softened butter evenly on one side of each slice of sourdough bread. Alternatively, for richer flavor, you may spread mayonnaise on the outside of the bread instead of butter before grilling.
  3. Assemble the sandwich: Place one slice of bread buttered side down onto a heated skillet over medium heat. Layer one slice of cheddar cheese directly on the bread, followed by the scrambled eggs, then the cooked bacon if using, the slice of American cheese, and finally the second slice of cheddar cheese.
  4. Top and cook the sandwich: Place the second slice of bread on top, buttered side facing up. Cook for 2 to 3 minutes until the bottom bread is golden brown and the cheese starts melting. Carefully flip the sandwich using a spatula and cook the other side for another 2 to 3 minutes until golden and the cheese is melted through.
  5. Rest and serve: Remove the sandwich from the skillet and let it sit for 1 minute to allow the cheese to set slightly before slicing. Serve warm and enjoy immediately.
