For the Granola Crust:
- 2 cups granola (preferably low-sugar)
- 3 tablespoons honey or maple syrup
- 3 tablespoons coconut oil (melted)
For the Tart Filling:
- 1 1/2 cups Greek yogurt (plain or vanilla)
- 1 teaspoon vanilla extract (if using plain yogurt)
- 2 cups mixed fresh fruit (such as strawberries, blueberries, kiwi, mango, or grapes)
- Optional fresh mint for garnish
Instructions
- Prepare the Granola Crust: Preheat the oven to 350°F (175°C). In a food processor, pulse the granola until it resembles coarse crumbs. Add the honey and melted coconut oil and pulse until the mixture sticks together. Press the mixture firmly into the bottom and sides of a 9-inch tart pan. Bake for 10–12 minutes until golden and crisp. Remove from oven and let cool completely.
- Assemble the Tart: In a bowl, mix Greek yogurt with vanilla extract if using. Once the crust is cool, spread the yogurt evenly over the crust. Top with an arrangement of fresh fruit in any design you like. Garnish with mint if desired. Chill for 15–30 minutes before slicing and serving.
