Lamb Shanks:

  • 4 lamb shanks (about 1 pound each)

Other Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 2 cups beef or chicken broth
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • Salt and black pepper, to taste


Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C).
  2. Sear the lamb: Pat the lamb shanks dry, season with salt and pepper. Sear in a Dutch oven until browned. Set aside.
  3. Sauté vegetables: Cook onion, carrots, and celery until softened. Add garlic and tomato paste, cook briefly.
  4. Deglaze and simmer: Pour in red wine, simmer to reduce slightly. Add broth, tomatoes, herbs. Return lamb to pot.
  5. Braise: Cover and braise in the oven for 2 1/2 to 3 hours until tender.
  6. Finish: Discard herbs, skim fat, and serve.

Notes

  • Serve over mashed potatoes, polenta, or noodles.
  • For a thicker sauce, reduce liquid on stovetop after cooking.
