Protein Yogurt Mixture:

  • 1/2 cup vanilla Greek yogurt
  • 1 scoop vanilla protein powder

Other:

  • 1 large egg, beaten for egg wash
  • 1 tablespoon coarse sugar for sprinkling (optional)
  • 1/4 cup powdered sugar mixed with 1–2 teaspoons milk for glaze (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Make the Blueberry Filling: In a saucepan, combine blueberries, honey, lemon juice, and cornstarch. Cook until thickened. Let cool.
  3. Prepare the Protein Yogurt Mixture: Mix Greek yogurt and protein powder until smooth.
  4. Assemble Pastries: Roll out puff pastry, cut into rectangles. Add protein yogurt and blueberry filling. Seal and brush with egg wash.
  5. Bake: Bake for 15–18 minutes until golden brown.
