- 2 tablespoons honey or maple syrup

Protein Yogurt Mixture:
- 1/2 cup vanilla Greek yogurt
- 1 scoop vanilla protein powder
Other:
- 1 large egg, beaten for egg wash
- 1 tablespoon coarse sugar for sprinkling (optional)
- 1/4 cup powdered sugar mixed with 1–2 teaspoons milk for glaze (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Make the Blueberry Filling: In a saucepan, combine blueberries, honey, lemon juice, and cornstarch. Cook until thickened. Let cool.
- Prepare the Protein Yogurt Mixture: Mix Greek yogurt and protein powder until smooth.
- Assemble Pastries: Roll out puff pastry, cut into rectangles. Add protein yogurt and blueberry filling. Seal and brush with egg wash.
- Bake: Bake for 15–18 minutes until golden brown.
- Glaze and Serve: Drizzle with glaze if desired before serving.
