Cheesecake Filling:

  • 2 tablespoons cream cheese (softened)
  • 1 teaspoon maple syrup or sugar
  • 1/4 teaspoon vanilla extract

Add-ins:

  • 1/4 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a small oven-safe ramekin or dish.
  2. Prepare oat mixture: In a blender, combine the oats, banana, milk, maple syrup, baking powder, cinnamon, vanilla extract, and salt. Blend until smooth.
  3. Layer in the dish: Pour half the oat mixture into the prepared dish. In a small bowl, mix the cream cheese, maple syrup, and vanilla for the cheesecake filling. Spoon the filling into the center of the oat mixture. Top with the remaining oat batter and swirl in a few blueberries.
