Description

This Blueberry & Almond Galette is a rustic, French-inspired dessert featuring a flaky pastry crust filled with juicy blueberries, almond flour, and a hint of lemon and almond extract. Perfectly baked until golden and topped with sliced almonds and coarse sugar, this easy dessert is great served warm with vanilla ice cream or whipped cream.

Ingredients

Scale

For the Filling

  • 2 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract

For the Crust

  • 1 sheet refrigerated pie crust or homemade pastry dough
  • 1/3 cup almond flour
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)
  • 2 tablespoons sliced almonds

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking the galette.
  2. Prepare Filling: In a medium bowl, combine the blueberries with sugar, cornstarch, lemon zest, lemon juice, and almond extract. Toss gently to coat the berries evenly.
  3. Roll Out Dough: Roll the pie crust into a 12-inch circle and transfer it onto the lined baking sheet, ready for filling.
  4. Add Almond Flour: Evenly sprinkle the almond flour over the center of the dough, leaving about a 2-inch border around the edges free.
  5. Assemble Filling: Spoon the blueberry mixture onto the almond flour in the center of the dough, spreading it out without reaching the edges.
  6. Fold Edges: Carefully fold the edges of the dough over the filling, pleating the crust as needed to create a rustic, free-form tart shape.
  7. Apply Egg Wash and Toppings: Brush the folded crust edges with the beaten egg to give it a golden shine after baking. Sprinkle coarse sugar and sliced almonds over the crust.
  8. Bake: Place the galette in the preheated oven and bake for 35 to 40 minutes, or until the crust is golden brown and the blueberry filling is bubbling.
  9. Cool and Serve: Allow the galette to cool on the baking sheet for 10–15 minutes before slicing. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for added indulgence.
  • Frozen blueberries can be used directly without thawing to maintain texture and juiciness.
  • Be careful not to overfill the crust to prevent leakage during baking.
  • The almond flour layer helps absorb juices and adds a nice texture contrast.
