Ingredients
Scale
For the Truffle Filling:
- 8 oz cream cheese, softened
- 2 cups powdered sugar, sifted
- 1 cup shredded coconut (optional for texture)
- 1 tsp vanilla extract
- ½ tsp almond extract (optional for extra flavor)
- 4 drops of blue food coloring
For the Coating:
- 12 oz white chocolate chips or candy melts
- Blue sparkling sugar or sprinkles for decoration
Instructions
- Prepare the filling: Beat the softened cream cheese in a large bowl until smooth and creamy. Gradually add the sifted powdered sugar and mix until fully combined. Stir in the vanilla extract, almond extract (if using), and blue food coloring until the mixture is evenly tinted, creating a vibrant blue cream cheese mixture.
- Shape and chill: Scoop tablespoon-sized portions of the filling and roll them into smooth balls. Arrange the balls on a parchment-lined baking sheet. Place the baking sheet in the freezer for 30 minutes to firm up the truffles, making them easier to coat.
- Melt the coating: Melt the white chocolate chips or candy melts in a microwave-safe bowl in 20-second intervals, stirring well between each interval until the chocolate is fully melted and smooth.
- Coat the truffles: Remove the chilled truffle balls from the freezer. Using a fork, dip each ball into the melted white chocolate, ensuring it is completely coated. Lift the truffle with the fork and gently shake off any excess chocolate. Place the coated truffles back onto the parchment-lined sheet. Immediately sprinkle blue sparkling sugar or sprinkles over the wet chocolate to decorate before it sets.
- Set and serve: Allow the coated truffles to set at room temperature or refrigerate for about 15 minutes until the coating hardens. Serve the truffles chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to one week to maintain freshness.
Notes
- For a textured filling, optional shredded coconut can be added.
- Almond extract is optional but adds a nice complementary flavor to the vanilla and blue food coloring.
- Use good quality white chocolate or candy melts for a smooth, glossy coating.
- Freeze the truffles before dipping to prevent them from melting during the coating process.
- Decorate immediately after dipping while the chocolate is still wet for best adhesion of sprinkles.
- Store in the fridge to keep the cream cheese filling fresh and the coating firm.
