- 1 cup dried green or brown lentils, rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes with juices
- 4 cups vegetable broth
- 1 bay leaf
- 1 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- juice of 1/2 lemon
- 2 tablespoons chopped fresh cilantro or parsley for garnish

- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery, and sauté for 5 minutes until the vegetables begin to soften.
- Stir in the cumin, smoked paprika, and chili powder, and cook for 1 minute to release the flavors.
- Add the lentils, black beans, diced tomatoes with their juices, vegetable broth, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 30 to 35 minutes, or until the lentils are tender.
- Remove and discard the bay leaf. Stir in the lemon juice, adjust seasoning if needed, and ladle into bowls. Garnish with fresh cilantro or parsley before serving.
Notes
- For a creamier texture, blend half the soup with an immersion blender before adding the lemon juice.
- You can substitute red lentils for a faster cooking time, though the soup will be softer in texture.
