Description

These authentic Birria Tacos feature tender, slow-cooked chuck roast simmered in a rich, flavorful sauce made from dried guajillo chiles, garlic, onion, and spices. Served in warm tortillas with a drizzle of the savory broth, they deliver a perfect balance of smoky, tangy, and savory flavors, ideal for a comforting and satisfying meal.

  • 3 lbs chuck roast

Sauce

  • 6 dried guajillo chiles, stems and seeds removed
  • 5 cloves fresh garlic
  • 1 medium onion, chopped
  • 1 tsp cumin powder
  • 4 cups beef broth, divided
  • Juice of 2 limes

  • Salt and pepper, to taste
  • Oil for searing
  • Tortillas for serving


Instructions

  1. Prepare the Chiles: Remove stems and seeds from dried guajillo chiles, then soak them in hot water for 15 minutes to rehydrate and soften.
  2. Make the Sauce: Blend the soaked chiles along with garlic, chopped onion, cumin powder, 1 cup of beef broth, and lime juice until the mixture is smooth and well combined.
  3. Sear the Meat: Heat oil in a large pot over medium-high heat. Season the chuck roast generously with salt and pepper, then sear on all sides until browned, locking in flavor.
  4. Simmer the Meat: Pour the blended chile sauce and the remaining 3 cups of beef broth into the pot with the seared meat. Bring to a simmer, reduce heat to low, cover, and cook for about 3 hours until the meat is tender and easily shredded.
  5. Shred the Meat: Remove the cooked roast from the pot and shred it finely using two forks. Reserve some of the cooking broth for serving.
  6. Assemble the Tacos: Warm tortillas on a skillet until pliable and lightly toasted. Fill each tortilla with shredded meat, drizzle some of the sauce and broth on top, fold, and serve immediately for an authentic Birria taco experience.

Notes

  • The broth from cooking the meat can be served as a side dip called consommé for an authentic experience.
  • Guajillo chiles can be substituted with ancho chiles if unavailable.
  • For extra flavor, add a cinnamon stick or bay leaf to the simmering sauce.
  • Leftover meat is excellent in burritos or quesadillas.
