Assembly:

  • 1 cup cooked quinoa or rice
  • 1/2 cup chopped cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 avocado, sliced
  • 2 tablespoons plain yogurt or tahini sauce
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prepare Spiced Chickpeas: Heat olive oil in a skillet, sauté onion, add garlic, chickpeas, berbere spice, tomato paste, salt, pepper, and broth. Simmer until thickened.
