Ingredients

Scale

Beef Spring Rolls

  • 1 lb ground beef (or thinly sliced beef, such as flank steak)
  • 1 tbsp olive oil or vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp ground ginger
  • 1/2 cup shredded carrots
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup fresh cilantro, chopped
  • 12 rice paper wrappers (medium size)
  • 1 cup lettuce (like Romaine or butter lettuce), shredded

Peanut Lime Sauce

  • 1/4 cup peanut butter (creamy or chunky)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp soy sauce
  • 1 tsp honey or maple syrup
  • 1 tsp sesame oil (optional)
  • 1/2-1 tbsp warm water (to adjust consistency)
  • 1/2 tsp chili garlic sauce (optional for heat)

Instructions

  1. Cook the Beef: In a large skillet or wok, heat the oil over medium-high heat. Add the chopped onion and garlic and sauté for 2-3 minutes until fragrant.
  2. Brown the Beef: Add the ground beef to the pan, breaking it up with a spoon, and cook until browned, about 5-7 minutes. If using sliced beef, cook until browned and cooked through.
  3. Add Seasonings and Vegetables: Stir in the soy sauce, oyster sauce (if using), ground ginger, shredded carrots, and chopped bell pepper. Continue cooking for another 2-3 minutes until the vegetables are softened.
  4. Cool and Add Herbs: Remove the beef mixture from heat and allow it to cool slightly. Stir in the chopped cilantro for freshness.
  5. Prepare the Rice Paper: Fill a shallow dish or large bowl with warm water. Dip one rice paper wrapper into the water for 5-10 seconds until soft and pliable, being careful not to soak it too long to prevent tearing.
  6. Lay Out the Wrapper: Place the softened rice paper onto a clean surface such as a large plate or countertop.
  7. Assemble the Rolls: Add a small handful of shredded lettuce in the center of the rice paper, then spoon 2-3 tablespoons of the beef mixture on top.
  8. Roll the Spring Roll: Fold in the sides of the rice paper and roll tightly from the bottom up, sealing the roll securely.
  9. Repeat: Continue the process with the remaining rice papers and filling ingredients until all are assembled.
  10. Make the Peanut Lime Sauce: In a small bowl, whisk together peanut butter, lime juice, soy sauce, honey, sesame oil (if using), and chili garlic sauce (if using).
  11. Adjust Sauce Consistency: Slowly add warm water a little at a time, whisking until the sauce becomes smooth, slightly thick, but easy to dip.
  12. Serve: Serve the freshly assembled beef spring rolls alongside the peanut lime dipping sauce. Enjoy as a snack, appetizer, or light meal!

Notes

  • To keep rolls from sticking, place them on a damp towel or parchment paper.
  • Rice paper wrappers become fragile quickly; work efficiently during assembly.
  • Oyster sauce can be omitted to keep the sauce vegetarian/vegan friendly if using plant-based beef.
  • Adjust chili garlic sauce in the peanut sauce to control spiciness level.
  • Fresh herbs like mint or basil can be added for extra flavor variations.
  • Consume spring rolls fresh for the best texture and taste as rice papers harden when refrigerated.
