Description

This hearty Beef Noodle Casserole combines tender ground beef, sautéed vegetables, and creamy cheese sauce with egg noodles, baked to golden perfection. It’s a comforting one-dish meal perfect for family dinners, offering a rich blend of savory flavors and textures.

Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 medium red bell pepper, diced

Seasonings and Liquids

  • ½ teaspoon dried oregano
  • Salt and black pepper, to taste
  • 2 cups low-sodium beef broth
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil

Pasta and Dairy

  • 10 ounces egg noodles (or your choice of noodles)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 cup grated Parmesan cheese, divided

Garnish

  • Fresh parsley, chopped

Instructions

  1. Preheat and Brown Beef: Preheat your oven to 350°F (177°C). Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, then drain any excess grease.
  2. Sauté Vegetables: Add chopped onion, minced garlic, and diced red bell pepper to the skillet with the beef. Cook until the vegetables are tender. Season with dried oregano, salt, and black pepper to taste.
  3. Add Liquids and Simmer: Pour in the low-sodium beef broth and heavy cream. Stir in Worcestershire sauce and bring the mixture to a simmer on medium heat.
  4. Cook Noodles: Add the egg noodles directly into the skillet. Cook until the noodles are al dente, absorbing the flavorful sauce.
  5. Incorporate Dairy: Reduce the heat to low and stir in sour cream. Then add half of the shredded cheddar cheese and half of the grated Parmesan cheese, stirring until melted and fully incorporated into the sauce.
  6. Assemble and Bake: Transfer the entire mixture into a baking dish. Sprinkle the remaining cheddar and Parmesan cheeses evenly over the top. Bake in the preheated oven for 20-25 minutes until the cheese on top is golden brown and bubbly.
  7. Garnish and Serve: Remove from the oven and garnish with freshly chopped parsley. Let the casserole cool slightly before serving to allow flavors to set.

Notes

  • You can substitute other types of noodles such as penne or rotini if preferred.
  • For a lighter dish, substitute heavy cream with half-and-half or whole milk, though the sauce will be less rich.
  • Make sure to drain excess fat after browning the beef to avoid a greasy casserole.
  • Leftovers can be stored covered in the refrigerator for up to 3 days.
  • Reheat individual portions in the microwave or oven until warmed through.
