  • 1 teaspoon garlic powder

  • 1-2 teaspoons hot sauce (sriracha recommended)

Instructions

  1. Cook Potatoes: Heat 2 tablespoons of canola oil in a large skillet over high heat. Add the diced potatoes and cook, stirring occasionally, until they become golden and crispy around the edges, approximately 6 minutes.
  2. Cook Beef Mixture: Add the ground beef, diced yellow onion, and red bell pepper to the skillet. Then stir in Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, dried oregano, kosher salt, ground black pepper, and hot sauce. Continue cooking, stirring and breaking up the beef, until the beef is fully cooked and the vegetables are tender, about 6 to 8 minutes.
  3. Finish and Serve: Stir in the sliced green onions. Taste the mixture and adjust seasoning with additional salt or hot sauce if needed. Serve the skillet mixture hot, accompanied by toppings such as non-fat plain Greek yogurt or sour cream, shredded cheddar cheese, and optionally with cooked brown rice or cauliflower rice for a complete meal.

Notes

  • The Yukon gold potatoes hold their shape well and develop a nice golden crust, but russet potatoes can be used as an alternative.
  • For added flavor, consider adding a pinch of cayenne pepper or smoked chili powder along with the paprika.
