Instructions

  1. Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
  2. Sauté Onions and Mushrooms: In the same skillet, add diced onion and cook 2-3 minutes until softened. Add sliced mushrooms and cook for an additional 4-5 minutes until the mushrooms release moisture and turn golden brown.
  3. Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Make Roux: Sprinkle the flour over the mushrooms and onions, stirring well to combine. Cook for 1-2 minutes to cook out the raw flour taste.
  5. Add Liquids and Simmer: Slowly pour in the beef broth while stirring, then add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook for 5-6 minutes until the sauce thickens slightly.
  6. Incorporate Cream: Stir in sour cream and heavy cream, cooking for an additional 2-3 minutes until the sauce is smooth and creamy. Season with salt and black pepper to taste.
  7. Combine Beef and Sauce: Return the cooked beef to the skillet and stir to combine with the sauce. Cook for 2-3 minutes until the beef is heated through and coated well.
