Ingredients
Scale
Beef and Sauce
- 1 lb beef sirloin or tenderloin, thinly sliced into strips
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cups mushrooms, sliced (cremini or button mushrooms work best)
- 2 cloves garlic, minced
- 1 tbsp all-purpose flour
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 cup sour cream
- 1/4 cup heavy cream
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Served With
- Egg noodles, rice, or mashed potatoes (for serving)
Instructions
- Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
- Sauté Onions and Mushrooms: In the same skillet, add diced onion and cook 2-3 minutes until softened. Add sliced mushrooms and cook for an additional 4-5 minutes until the mushrooms release moisture and turn golden brown.
- Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant.
- Make Roux: Sprinkle the flour over the mushrooms and onions, stirring well to combine. Cook for 1-2 minutes to cook out the raw flour taste.
- Add Liquids and Simmer: Slowly pour in the beef broth while stirring, then add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook for 5-6 minutes until the sauce thickens slightly.
- Incorporate Cream: Stir in sour cream and heavy cream, cooking for an additional 2-3 minutes until the sauce is smooth and creamy. Season with salt and black pepper to taste.
- Combine Beef and Sauce: Return the cooked beef to the skillet and stir to combine with the sauce. Cook for 2-3 minutes until the beef is heated through and coated well.
- Serve: Serve the stroganoff over prepared egg noodles, rice, or mashed potatoes. Garnish with chopped fresh parsley and enjoy!
