Instructions
- Brown the beef and onions: In a large pot over medium heat, brown the ground beef and finely chopped red onion until the beef is fully cooked and the onion softens, about 5-7 minutes. Drain any excess fat to keep the soup from becoming greasy.
- Add liquids and seasonings: Pour in the rich beef stock, fresh chopped tomatoes, sundried tomato puree, Worcestershire sauce, crushed oregano, and dried basil. Stir well to combine all ingredients and bring the mixture to a simmer.
- Cook pasta and vegetables: Add the uncooked elbow pasta and frozen mixed vegetables to the pot. Stir to combine, cover the pot, and let simmer for 10-12 minutes until the pasta is tender and the vegetables are heated through.
