- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 bay leaf
- 6 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2/3 cup pearl barley
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Brown Beef: In a large pot, heat olive oil and brown beef on all sides. Set aside.
- Sauté Vegetables: In the same pot, sauté onion, garlic, carrots, and celery until softened.
- Combine Ingredients: Return beef to the pot, add thyme, rosemary, bay leaf, broth, tomatoes, and barley. Simmer.
- Finish Soup: Once beef and barley are tender, season with salt and pepper. Garnish with parsley and serve hot.
