Sandwich

- Combine Chicken and BBQ Sauce: In a bowl, mix the shredded cooked chicken with the BBQ sauce until the chicken is evenly coated.
- Prepare the Bread: Spread the softened butter on one side of each slice of bread to ensure a crispy, golden crust when grilled.
- Heat Skillet: Place a large skillet or griddle over medium heat to warm it up for cooking the sandwiches.
- Assemble Sandwiches: On the skillet, place one slice of bread with the buttered side down. Add 1/4 cup shredded cheese, then top with 1/4 cup of the BBQ chicken mixture. If desired, add some thinly sliced red onion and chopped cilantro for extra flavor. Sprinkle another 1/4 cup of cheese on top to help the sandwich stick together.
