Description

Indulge in the creamy decadence of this Basque Cheesecake, a rustic and crustless delight that boasts a deeply caramelized top and a velvety center. Originating from the Basque region of Spain, this dessert is a must-try for cheesecake enthusiasts.

Ingredients

Scale

Cheesecake:

  • 2 pounds cream cheese (room temperature)
  • 1 1/2 cups granulated sugar
  • 6 large eggs
  • 2 cups heavy cream
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare: Preheat the oven to 400°F (205°C). Line a 9-inch springform pan with parchment paper, leaving overhang.
  2. Mix Cream Cheese and Sugar: Beat cream cheese and sugar until smooth. Add eggs one at a time.
  3. Add Remaining Ingredients: Pour in heavy cream, vanilla, and salt. Mix until combined. Sift in flour and mix until smooth.
  4. Bake: Pour batter into pan. Bake for 50–60 minutes until golden with a slight jiggle.
  5. Cool and Chill: Cool to room temp, then refrigerate for 4 hours before slicing.

Notes

  • For an authentic look and flavor, let the top caramelize well, cracks are normal. Tastes best the next day.
