Ingredients
Scale
Fritter Mixture
- 2.5 cups cauliflower rice (fresh or frozen, thawed)
- 2/3 cup shredded cheddar cheese
- 1/4 cup almond flour
- 2 large eggs, unbeaten
- 1 scallion, thinly sliced
- 1/2 teaspoon table salt
- 1/4 teaspoon ground black pepper
Cooking
- 2 tablespoons butter
Instructions
- Combine Ingredients: In a large bowl, mix together the cauliflower rice, shredded cheddar cheese, almond flour, unbeaten eggs, sliced scallion, salt, and black pepper until everything is uniformly combined.
- Heat Butter: Place a large skillet over medium heat and melt the butter to prepare the pan for frying the fritters.
- Scoop Fritter Mixture: Using about 1/4 cup per fritter, carefully scoop the mixture and place it into the hot skillet, flattening each slightly with a spatula to form patties.
- Cook Fritters: Fry the fritters for 3 to 4 minutes on each side, or until they turn golden brown and are cooked through. Be sure not to overcrowd the skillet to allow even cooking.
- Drain Excess Butter: Remove the cooked fritters from the skillet and place them on paper towels if desired to absorb any excess butter.
- Serve Warm: Enjoy the fritters warm as a tasty side dish or a satisfying snack.
Notes
- Ensure cauliflower rice is well-drained to avoid soggy fritters.
- For a spicier twist, add a pinch of cayenne pepper or smoked paprika to the mixture.
- These fritters can be made gluten-free by using almond flour as specified.
- You can substitute cheddar cheese with any other favorite cheese like mozzarella or gouda.
- For a crispier texture, cook on slightly lower heat for a longer time.
