- 2 pints cherry or grape tomatoes
- 3 tablespoons olive oil (divided)
- 1 tablespoon balsamic vinegar
- 2 teaspoons kosher salt (divided)
- 1 teaspoon freshly ground black pepper (divided)
- 16 ounces fresh mozzarella (sliced or in small balls)
- ¼ cup fresh basil leaves (torn)
- Extra balsamic glaze for drizzling (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the tomatoes.
- Prepare Tomatoes: Place the cherry tomatoes on a baking sheet, drizzle with 2 tablespoons of olive oil and the balsamic vinegar. Sprinkle with 1½ teaspoons of kosher salt and ½ teaspoon of freshly ground black pepper. Toss everything together to coat evenly and spread the tomatoes in a single layer.
- Roast Tomatoes: Roast the tomatoes in the preheated oven for 20–25 minutes, until they become soft and start to burst, releasing their concentrated flavors. Remove from the oven and let them cool slightly.
- Assemble Salad: On a serving platter, arrange the slices or balls of fresh mozzarella alongside the roasted tomatoes. Sprinkle with the remaining ½ teaspoon kosher salt and ½ teaspoon black pepper for balanced seasoning.
- Finish and Garnish: Drizzle the remaining 1 tablespoon olive oil over the salad and scatter the torn fresh basil leaves on top. Optionally, add a drizzle of balsamic glaze for added sweetness and visual appeal.
- Serve: Serve the salad at room temperature to best enjoy the roasted tomato flavors and creamy mozzarella texture.
