Chicken:

  • 2 large boneless skinless chicken breasts (sliced into strips)
  • 1 cup buttermilk
  • 1 cup panko breadcrumbs
  • 1/2 cup plain breadcrumbs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (for drizzling)

Bang Bang Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (or to taste)
  • 1 tablespoon honey
  • 1 tablespoon lime juice

Garnish:

  • Chopped green onions
  • Sesame seeds
  • Extra sauce for drizzling

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Marinate the chicken: Combine buttermilk with salt and pepper, add chicken strips, coat, and marinate for 10–15 minutes.
  3. Prepare breadcrumb mixture: Mix panko, plain breadcrumbs, garlic powder, paprika, and salt in a bowl.
  4. Coat the chicken: Dredge marinated chicken in breadcrumb mixture, press to adhere, and arrange on baking sheet. Drizzle with olive oil.
  5. Bake: Bake for 22–25 minutes, flipping halfway, until golden, crispy, and internal temperature reaches 165°F.
  6. Make the sauce: Whisk together all bang bang sauce ingredients in a bowl.
  7. Finish and serve: Drizzle chicken with sauce, garnish with green onions and sesame seeds. Serve hot.
