- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 (10-ounce) packages frozen chopped spinach, thawed and well-drained
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
Instructions
- Preheat and prepare baking dish. Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish to prevent sticking.
- Sauté onion and garlic. In a skillet over medium heat, melt the butter and sauté the chopped onion until softened, about 4–5 minutes. Add minced garlic and cook for an additional 1 minute until fragrant.
- Combine ingredients. In a large bowl, mix together the sautéed onion and garlic with the well-drained spinach, softened cream cheese, sour cream, grated Parmesan, shredded mozzarella, eggs, salt, pepper, and nutmeg, stirring until fully incorporated.
- Transfer and bake. Spread the mixture evenly into the prepared baking dish. Bake in the preheated oven for 30–35 minutes or until the casserole is set and lightly golden on top.
- Cool and serve. Remove from oven and let the casserole cool for a few minutes before serving to allow it to set properly.
