Spaghetti Squash:
- 1 medium spaghetti squash (about 3 pounds)
- 1 tablespoon olive oil

- 2 cloves garlic (minced)

- 1 ½ cups milk
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground mustard (optional)
- 1/4 teaspoon paprika
- 1 tablespoon chopped parsley (optional, for garnish)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Prepare the squash: Cut the spaghetti squash in half lengthwise, remove the seeds, drizzle with olive oil, and roast cut side down on a baking sheet for 35-40 minutes.
- Make the cheese sauce: Melt butter, sauté garlic, add flour, whisk in milk, then add cheddar, Parmesan, salt, pepper, mustard, and paprika until smooth.
- Combine: Scrape the cooked squash into strands, mix with cheese sauce, transfer to a baking dish.
