Instructions

  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, and optional chopped nuts. Stir well to evenly distribute the spices and nuts.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup, and applesauce until fully blended and smooth.
  4. Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until the mixture is well combined and slightly thick.
  5. Add Apples: Gently fold in the diced apples to incorporate them evenly throughout the oatmeal mixture without breaking the pieces.
  6. Fill Muffin Tin: Spoon the oatmeal mixture into the prepared muffin cups, pressing down slightly to compact the mixture for even baking.
