  • 1 cup shredded red cabbage
  • 1 cup corn kernels (fresh, canned, or grilled)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving
  • For the Baja sauce:

    • 1/2 cup plain Greek yogurt or sour cream
    • 2 tablespoons mayonnaise
    • 1 tablespoon lime juice
    • 1 teaspoon hot sauce (optional)
    • 1/2 teaspoon garlic powder
    • Salt to taste

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Season the fish: In a small bowl, mix olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper. Brush the seasoning onto both sides of the fish fillets.
