Shrimp Creole:
- 1 1/2 pounds large shrimp, peeled and deveined
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes with juice
- 1/4 cup tomato paste
- 1 cup seafood stock or chicken broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon hot sauce (optional)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions
- 2 tablespoons chopped fresh parsley
- Cooked white rice, for serving
Instructions
- In a large skillet or Dutch oven, heat the butter and olive oil over medium heat. Add onion, bell pepper, and celery. Sauté for 6–8 minutes until softened.
- Add garlic and cook for 1 more minute until fragrant.
- Stir in diced tomatoes, tomato paste, broth, Worcestershire sauce, hot sauce (if using), paprika, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook uncovered for 20–25 minutes, stirring occasionally, until thickened and flavors have melded.
- Add the shrimp and cook for 4–5 minutes, or until they are pink and just cooked through. Remove from heat and stir in green onions and parsley.
- Serve hot over cooked white rice.
Notes
- For extra depth, use shrimp stock if available.
- This dish gets better after a short rest, so letting it sit for 10 minutes before serving enhances the flavor.
- Adjust heat with more or less hot sauce.
