Curry Chicken:
- 3 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 scallions, chopped
- 1 Scotch bonnet pepper, whole or sliced
- 2 medium potatoes, peeled and diced
- 2 cups chicken broth or water
- 1 teaspoon fresh grated ginger
- 1 bay leaf
Instructions
- Marinate Chicken: Wash chicken, season with spices, and marinate for at least 1 hour.
