Instructions
- Preheat oven and prepare muffin tin: Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease.
- Mix wet ingredients: In a large bowl, whisk together applesauce, eggs, maple syrup, almond milk, and vanilla extract until smooth.
- Combine dry ingredients: In a separate bowl, mix oat flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine wet and dry mixtures: Add dry ingredients to the wet mixture and stir until just combined.
- Add fruit and nuts: Fold in the diced apple and optional nuts.
- Bake: Divide the batter evenly among the muffin cups. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
