Instructions

  1. Prepare the filling: In a skillet over medium heat, melt the butter. Add diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes, stirring frequently until the apples are tender and the spices are fragrant.
  2. Thicken the filling: Stir in the cornstarch slurry and cook for another 1–2 minutes, stirring constantly until the mixture thickens, then remove from heat and let it cool slightly to avoid tearing the wrappers.
  3. Assemble the egg rolls: Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of the apple filling near the bottom corner. Fold the bottom corner over the filling, fold in the sides tightly, and roll up firmly. Seal the top corner with a dab of water to secure the egg roll. Repeat with remaining wrappers and filling.
  4. Heat the oil: In a deep skillet, heat about 2 inches of oil to 350°F (175°C) ensuring it is hot enough for frying without absorbing too much oil.
  5. Fry the egg rolls: Carefully place the egg rolls in the hot oil in batches, frying each side for 2–3 minutes until golden brown and crisp. Turn them as needed for even cooking.
