Ingredients
Scale
Pastry
- 1 sheet of puff pastry, thawed
Almond Filling
- 1/2 cup almond paste, crumbled
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup almond flour
Topping
- 1/4 cup sliced almonds
- Powdered sugar for dusting (optional)
Instructions
- Prepare the oven and muffin tin: Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin to prevent sticking.
- Make the almond filling: In a medium bowl, combine the crumbled almond paste, granulated sugar, and softened butter. Mix until smooth. Then add the egg, vanilla extract, and almond extract, stirring until fully incorporated. Finally, fold in the almond flour to complete the filling.
- Cut the puff pastry: On a lightly floured surface, roll out the thawed puff pastry sheet and cut it into 12 equal squares to fit the muffin cups.
- Assemble the muffins: Line each muffin cup with a puff pastry square, pressing the dough down and up the sides of the cup. Spoon about one tablespoon of the almond filling into the center of each pastry square. Then fold the corners of the square over the filling to partially cover it.
- Add toppings: Sprinkle sliced almonds evenly over the tops of each filled puff pastry cup to add crunch and an appealing look.
- Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the puff pastry is puffed up and golden brown.
- Cool and serve: Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely. Dust with powdered sugar if desired before serving.
Notes
- Thaw the puff pastry sheet fully before use to make cutting and shaping easier.
- The almond paste should be softened or crumbled finely for smooth mixing.
- Folding corners is a loose seal—they won’t fully cover the filling, giving the classic appearance.
- You can make these a day ahead and store in an airtight container at room temperature.
- For extra decadence, serve warm with a spread of butter or jam.
