Ingredients
Scale
Main Ingredients
- 1/2 cup (115g) unsalted butter, cut into pieces
- 4 oz (115g) semi-sweet or bittersweet chocolate, chopped
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 2 large egg yolks
- 1 tsp vanilla extract
- 1/4 cup (30g) all-purpose flour
- Pinch of salt
For Preparation
- Butter (for greasing ramekins)
- Powdered sugar (optional, for dusting)
Instructions
- Prepare the ramekins: Generously butter the inside of two ramekins to ensure the lava cakes do not stick during cooking.
- Melt butter and chocolate: Combine the butter pieces and chopped chocolate in a microwave-safe bowl, heating in 20-second intervals and stirring until fully melted and smooth. Allow to cool slightly.
- Mix the batter: In a separate bowl, whisk together granulated sugar, eggs, and egg yolks until well combined and slightly thickened. Stir in vanilla extract.
- Combine chocolate mixture and eggs: Slowly add the melted chocolate and butter mixture into the egg mixture, stirring gently to combine.
- Add dry ingredients: Sift the all-purpose flour and salt over the wet ingredients and fold carefully until fully incorporated, ensuring no lumps.
- Fill ramekins: Divide the batter evenly between the prepared ramekins, filling them about three-quarters full.
- Air fry the cakes: Preheat the air fryer to 370°F (188°C). Place the ramekins inside the air fryer basket and cook for about 9-11 minutes, or until the edges are set but the centers remain soft and gooey.
- Serve: Carefully remove the ramekins from the air fryer, let them cool for a minute or two, then invert onto plates or serve directly from the ramekins. Optionally, dust with powdered sugar before serving.
Notes
- Be careful not to overcook; the center should remain molten.
- You can substitute dark chocolate for a less sweet taste.
- If you don’t have an air fryer, you can bake at 425°F (220°C) for 10-12 minutes in a conventional oven.
- Allow cakes to cool slightly before serving to avoid burns from hot lava center.
- For an extra touch, serve with vanilla ice cream or fresh berries.
