Description

This Air Fryer Lava Cake recipe delivers a rich, gooey chocolate dessert in just 15 minutes, perfect for a quick indulgence. Made with melted butter and chocolate, eggs, sugar, and flour, these individual cakes have a molten center and a delicate, tender crumb. Using an air fryer ensures a perfectly baked exterior with a luscious lava interior without heating up your oven.

Ingredients

Scale

Main Ingredients

  • 1/2 cup (115g) unsalted butter, cut into pieces
  • 4 oz (115g) semi-sweet or bittersweet chocolate, chopped
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup (30g) all-purpose flour
  • Pinch of salt

For Preparation

  • Butter (for greasing ramekins)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Prepare the ramekins: Generously butter the inside of two ramekins to ensure the lava cakes do not stick during cooking.
  2. Melt butter and chocolate: Combine the butter pieces and chopped chocolate in a microwave-safe bowl, heating in 20-second intervals and stirring until fully melted and smooth. Allow to cool slightly.
  3. Mix the batter: In a separate bowl, whisk together granulated sugar, eggs, and egg yolks until well combined and slightly thickened. Stir in vanilla extract.
  4. Combine chocolate mixture and eggs: Slowly add the melted chocolate and butter mixture into the egg mixture, stirring gently to combine.
  5. Add dry ingredients: Sift the all-purpose flour and salt over the wet ingredients and fold carefully until fully incorporated, ensuring no lumps.
  6. Fill ramekins: Divide the batter evenly between the prepared ramekins, filling them about three-quarters full.
  7. Air fry the cakes: Preheat the air fryer to 370°F (188°C). Place the ramekins inside the air fryer basket and cook for about 9-11 minutes, or until the edges are set but the centers remain soft and gooey.
  8. Serve: Carefully remove the ramekins from the air fryer, let them cool for a minute or two, then invert onto plates or serve directly from the ramekins. Optionally, dust with powdered sugar before serving.

Notes

  • Be careful not to overcook; the center should remain molten.
  • You can substitute dark chocolate for a less sweet taste.
  • If you don’t have an air fryer, you can bake at 425°F (220°C) for 10-12 minutes in a conventional oven.
  • Allow cakes to cool slightly before serving to avoid burns from hot lava center.
  • For an extra touch, serve with vanilla ice cream or fresh berries.
