  • 1 can (15 oz) chickpeas, drained and rinsed

  • Chopped roasted peanuts and fresh cilantro for garnish (optional)


Instructions

  1. Saute Aromatics: In a large pot, heat oil over medium heat. Add diced onion and cook until softened. Stir in garlic and ginger until fragrant.
  2. Add Spices: Stir in cumin, smoked paprika, and cayenne. Coat the onions with the spices.
  3. Cook Stew: Add sweet potato, bell pepper, diced tomatoes, peanut butter, and vegetable broth. Bring to a boil, then simmer until sweet potatoes are tender.
  4. Finish Dish: Add chickpeas and greens. Simmer until greens are wilted. Season with salt and pepper. Serve hot, garnished with peanuts and cilantro.
