Instructions
- Saute Aromatics: In a large pot, heat oil over medium heat. Add diced onion and cook until softened. Stir in garlic and ginger until fragrant.
- Add Spices: Stir in cumin, smoked paprika, and cayenne. Coat the onions with the spices.
- Cook Stew: Add sweet potato, bell pepper, diced tomatoes, peanut butter, and vegetable broth. Bring to a boil, then simmer until sweet potatoes are tender.
